Ingredients
½ cup granulated sugar
2 ¼ cups whole milk
Pinch of salt
3 tablespoons cocoa powder (unsweetened)
2 tablespoons cornstarch
2 large egg yolks
1 large egg
1 teaspoon vanilla extract
2 tablespoons butter (unsalted), cut into pieces
5 ounces bittersweet or semisweet chocolate, chopped or grated
Whipped cream (for serving)

Step 1
Grab a medium-sized saucepan and combine ¼ cup of the sugar with 2 cups of the milk, and the pinch of salt. Bring the mixture to a boil over medium heat while stirring to help dissolve the sugar. Set it aside.
Step 2
In a bowl, whisk the unsweetened cocoa powder, the remaining ¼ cup of sugar, and the cornstarch together, then add the remaining ¼ cup of milk and whisk again. Once you have a smooth mixture, whisk it into the saucepan with the hot milk. Bring to a boil again and don’t stop whisking. Reduce the heat and let it simmer by continuing to whisk until you feel the pudding has thickened enough to coat the back of a spoon. (2 minutes)
Step 3
Grab another medium bowl and whisk the egg yolks with the egg. Then, whisk part of the hot cocoa pudding into the eggs until you get an even texture. Put the mixture back into the saucepan and cook it over moderate heat for another 2 minutes.
Step 4
Move the pudding into a heatproof bowl and add the butter, vanilla, and chopped chocolate. Whisk them all together. Transfer the chocolate pudding into a pan of your choice and refrigerate until chilled. Add whipped cream on top for extra creaminess. Enjoy!
