Create A Paste First
The pizza dough uses the tangzhong method, which requires you to slowly cook water and flour into a paste. You need three tablespoons of all-purpose flour and two-thirds of a cup of water. Cook it on medium heat until it becomes gloopy, as this will gelatinize the starch in the flour.
All About The Dough
To create the special dough, you need half a cup of lukewarm water, one teaspoon of yeast, and one tbsp of granulated sugar. You will need two cups of all-purpose flour, a quarter cup of whole wheat flour, 2 tsp of salt, and some olive oil.
Combine the water, sugar, and yeast in a bowl until it turns frothy. Add the remaining dough ingredients, and paste, and mix them together using a spatula, creating a wet dough. Cover and let it rest for an hour.

Treat It Carefully
Stretch and fold one corner of the dough to the other, and continue this motion around the dough. Flip over and cover again. Repeat this process four times every hour. Finally, half your dough, shaping both halves into balls and refrigerate overnight.
Cooking Your Pizza
Once the dough has rested overnight, it’s time to make your delicious pizza. Leave the dough to come to room temperature for an hour before cooking, then coat the bottom of a skillet pan with oil. Preheat your oven to a scorching 500° F.
Flatten the dough on a floured surface with your fingertips, transfer it to the skillet, fill the base, and stretch the base halfway up the sides. Let this further proof for an hour before cooking on a medium heat for five minutes. Add your pizza toppings and transfer to the oven for 11 to 14 minutes.
