Easiest way to make pão de queijo (Brazilian Cheese Bread)

If you love bread rolls then you have to try the Brazilian version. The tapioca-based rolls are cheesy and chewy and known as pão de queijo. And one thing is for sure – it is delicious! The recipe for making these bread rolls have been uploaded on the SBS Food website for a while now. If you have read it then you will learn that they use a dump and mix method to prepare it within minutes. 

Moving away from the traditional

It is a little different from the traditional recipe. Traditionally, you have to use a firmer dough, roll them into little balls and bake them until they puff up. But if you add super fine, powdered cheese (pre-grated cheese), it mixes well with batter. You can either get this cheese from the store or hand-grate them, all 1 ½ cups of it.  

The recipie for preparing the pão de queijo

Take a bowl that will fit the following ingredients and their quantities – 1 cup milk, 1 cup oil or melted butter, 3 eggs, 3 cups tapioca flour, and 1 ½ cups of grated parmesan cheese. 

Mix them all well until you see it forming into a thick batter. 

Spoon into two non-stick 12 hole muffin pans. For 20 minutes bake it at 180°C. It should become crisp and golden. 

Let it cool for a while but do not let it go cold. Serve it while it is still warm. 

You can store them in the refrigerator if there are leftovers and you want to eat them the next day too. Just remember to reheat it in the oven for about 10 minutes. If it is a weekend and you are feeling particularly lazy, you can microwave them for about 10-15 seconds. But this also means losing out on its crispness. The choice is yours.
