You’ve Never Seen Avocado Used Like This Before

Millenial influence in the food world can be felt far and wide – from Instagram shots of everything from chocolate spaghetti to red wine pasta to rose-inspired macarons, there’s no food trend that Millenials are afraid to try. This is the generation which grew up with taste buds accustomed to sushi, curry, and chicken tikka masala from a young age – no Lunchables or ham and cheese sandwiches for the children born in the late 1980s and early 1990s. Of course, Millenials are also notorious for incorporating avocado into the most unusual of dishes – but we’d never seen avocado pasta until recently.

Anna Monette Roberts of PopSugar decided to be brave and take on the experimental pasta in an at-home attempt at creamy avocado goodness in pasta – essentially, the dish is spaghetti con guacamole, if you will. The first step Anna took was to puree the avocado, adding some lemon zest, salt, garlic and herbs. She explained that it tasted basically like pesto, but with a creamy alfredo like texture. She considered it to be a huge, tasty hit, so here’s the easy to follow recipe:

INGREDIENTS 1 (10-ounce) Pasta of your choice (Cellentani, fusilli, whatever floats your boat.) 1 avocado, after removing pit and skin 1/2 packed cup fresh parsley or basil (or both, for taste) 1 Garlic Clove 1/2 Teaspoon salt or alternative 2 Tablespoons olive oil 1 Lemon Zest (Zest = the outer skin of a lemon. You can use an orange or citron instead.)

DIRECTIONS Salt the water and wait until boiling. Then add pasta and cook until al dente or your preference in terms of crunchy/soft texture. At the same time, combine all the other ingredients in a food processor or blender and grind until similar to yogurt texture. After the pasta is ready, drain, add pepper and salt, then return to pot. Stir in avocado sauce and voila! Enjoy. Serve immediately.
